Put about 1/4 of the mix in a liquid
mixing cup (with a pouring spout) and add food coloring. Red -
hearts for Valentine's Day, Green - St. Patrick's Day
Using colored batter, pour onto hot
frying pan in the shape you want. Remember the shape will be
reversed when you flip it on to the plate. Do letters
backwards.
Let cook for about 30 seconds, then pour
regular batter around the shape. Do not pour it directly on the
center of your shape, or it may spread messing up your pattern.
Follow the directions to make your favorite cake mix.
Have the kids spoon the batter into the
ice cream cones. Be careful not to fill them more than 3/4 full.
Put the filled cones into the cupcake tin.
Bake at 350f for 10-15 minutes.
Insert a toothpick to check that they are cooked.
Let the kids ice and decorate their
cupcake cones. You can use different colored icing,
multi-colored sparkles, or candy as decorations.

I am the Nutritionist for a Reservation Daycare.
For Birthdays, I always ask the child what kind of cake he/she would
like to have. One of my older kids told me that he did not like cake. I
surprised him with cupcake cones and all the fixings to decorate them
with. The kids had a great time decorating their own cone and my little
birthday boy said that was the best "ice cream" he had ever
had! Thank you for the great idea!
clean the seeds from a pumpkin. Wash them to remove any orange
bits.
Put them in a pot and cover with water. Boil them for about 10
minutes.
Drain the seeds and spread them on a cookie sheet.
Add about 1 tbsp of olive oil and 1 tsp of salt.
Mix the seeds until they are well coated.
Bake at 350F for 20 minutes or until golden brown
You can skip the step of boiling, but the seeds taste better and are
less chewy if they are boiled before baking.
A friend of mine omits the oil, and bakes the seeds on low heat 250F
for 1-2 hours. We've never wanted to wait that long to see if this
method is better!
Pumpkin seeds are the only seeds you can roast. Try roasting the
seeds from any winter squash. Spagetti squash seeds are one of our
favorites.
